Recipe: Mushroom salbute

Recipe for four portions


  • Mole verde (green sauce)
  • Onion
  • Garlic
  • Coriander
  • Parsley
  • Spring onion (green part)
  • Red radish leaves
  • Romaine lettuce
  • Pumpkin seeds
  • Green chilli
  • Vegetable stock 1 litre

Corn cake

  • Corn flour
  • Bean paste
  • Seasoning with cumin and salt


  • Mushroom
  • Olive oil 50ml
  • Rosemary
  • Fresh thyme
  • Bay leaf 2pcs
  • Salt 
  • Paper

Preparation for the sauce

  • Boil the chilli, garlic, green tomato and onions
  • Roast the pumpkin seeds
  • Blend all the ingredients together  and cook for 15 minutes
  • Rectify seasoning

Preparation for the cake

  • Make dough with the cornflour, fill it with the bean paste and cook in a pan
  • Reserve and fry before you serve
  • Saute with olive oil, the mushroom add the herbs and seasoning
